It has been exciting to see things growing in our new garden. The peas have been popular because they are delicious. There are some beans too and of course these Zucchinis/Marrows.

This recipe from the recent 'Good' magazine makes a yummy dip or spread:
ReplyDeleteRoast Zucchinin and Almond Spread
2 large zucchini sliced lengthways (I used half a large marrow with the very soft pulp scraped out)
Olive oil to drizzle
1/2 cup raw almonds
1 garlic clove
1 sprig fresh thyme
2 tablespoons olive oil
salt to taste
Preheat oven to 180 degrees.
Put zucchini on an oiled oven dish or tray. Sprinkle with salt. Roast for 20 minutes. Allow to cool.
Place almonds, garlic in a blender and whiz until chopped to fine crumble. Add cooked zucchini, thyme, olive oil and a pinch of salt. Blend to a smooth paste. Chill.
