Zucchini Cake!

Zucchini cake
Before the Easter holidays John´s literacy group got to invent some recipes with the main ingredient being zucchinis. John and John’s literacy group all inspired me to try a recipe at home. So on Monday this week I decided to make a zucchini cake. So if you would like to make a zucchini cake just read this recipe below and you can try it yourself!!!

Zucchini Cake

3 eggs
1 cup brown sugar
1/2 cup white sugar
1 tsp vanilla essence
125g butter, softened
1/2 cup plain unsweetened yoghurt
250-300g grated zucchini
250g chocolate chips
2 1/2 cups flour
1/4 cup cocoa
2 tsp baking soda
1 tsp cinnamon
1/2 tsp mixed spice

In a food processor or using a beater mix eggs, sugars and vanilla.
Add butter and yoghurt, blend until smooth.
Fold in zucchini and chocolate and combined dry ingredients.  Mix gently.
Spread into greased cake tin and bake at 180 degrees for 50 minutes.
Keep in the fridge.



What happened to my Zucchini cake?

Molly made an amazing Zucchini cake and we ate it.  It was devoured, annihilated, devastated, destroyed, alongside a cup of tea during morning break in the staffroom.  It was delicious Thanks Molly!
